I don’t know about you, but when I think of the perfect Saturday morning breakfast, I think blueberry pancakes! We didn’t have any fresh blueberries, but we’re hoping to grow some soon. Frozen had to do this time!
I found this recipe from The Stay At Home Chef, and it made perfectly fluffy pancakes! I’ve always found that pancake recipes are generally all the same, but somehow some of them turn out and others don’t 😄 Though now that I’m thinking about it, maybe that’s just user error… haha!
The recipe tells you to fold in the blueberries, but I just sprinkled mine on top after I had scooped out the pancake mix. I didn’t want to crush the blueberries, or turn the batter purple!
